This recipe is super simple, delicious, cheap and can be made from ingredients found in most pantries. What’s not to love?
You will need:
2 cloves of garlic, crushed (or use the one from a jar)
red chillis, as many as you like
1/2 teaspoon cumin
1 teaspoon garam masala
1/2 teaspoon ground tumeric
1 cup of dried red lentils
2 teaspoons of powdered vegetable stock
4 cups of water
1 tomato
Basically just cube the tomato, cut up the chilli and put everything in a pot and bring to the boil. Then simmer for 30 minutes or until most of the water has been absorbed and you’re left with a nice thick stew.
Garnish with coriander and extra chilli if you need more heat. You’re left with a big, healthy bowl of comforting lentils for not much effort.
